Ingredients
600g Rump steak, trimmed of visible fat
2 tbsp Olive oil
270g Packet soba noodles
1 bunch Asparagus, cut into 3cm lengths
150g Chinese cabbage, shredded
2 Long red chillies, seeds removed and finely sliced
1 tbsp Sesame seeds, dry toasted
1 cup Whole coriander leaves
1 cup Whole mint leaves
For the dressing:
3 tbsp Dark soy sauce
Juice of 1 lime
1 tbsp Brown sugar
Method
1. To cook the beef, season steak and brush with oil. Either chargrill,
BBQ or panfry 3-4 minutes aside for medium rare. Cover and let
the meat rest whilst preparing the salad.
2. Cook the noodles in boiling water for 5 minutes, drain and refresh.
3. Blanch the asparagus for 3 minutes, drain and refresh.
4. Place the soba noodles, asparagus, snow peas, cabbage, chillies,
sesame seeds, coriander and mint leaves into a bowl.
5. Mix all the dressing ingredients together and toss through the
noodles
6. Slice the beef and place onto the noodle salad.
