Mum’s Sunday roast
Classic roast beef on a bed of garden herbs.

Preparation Time: 10 minutes
Cooking Time: 45 minutes
   
   
   

Ingredients
1kg boneless sirloin, visible fat trimmed
1/2 bunch thyme
1/2 bunch rosemary
50ml olive oil
250 ml packet liquid red wine beef gravy

 

Method
1. Preheat oven to 200C. Combine the herbs and place half under the beef and half on top . Tie with kitchen string and place in roasting tray. Pour oil over, and surround with prepared vegetables.
2. Cook, checking after 30 minutes. When cooked to preference, remove meat from oven, wrap loosely in foil and all to rest for at least 15 minutes.
3. To serve, discard herbs, slice beef and serve with the vegetables and warmed gravy.

 

Tip: Refrigerate leftover beef, wrapped in foil and plastic. Slice thinly for sandwiches. Never leave leftovers in the oven overnight.
